But here is what the consumer is up against. A 1996 study by the FDA found that 96% of the extra virgin olive oils tested had been adulterated with cheap, inferior oils. This means that 96% of the “quality” olive oils available aren’t what you think you are buying, and some are even toxic due to the oils used to adulterate them. Real olive oil is one of the healthiest foods on the planet, as study after study shows. One recent study in the European Journal of Nutrition found that 2 tablespoons of olive oil consumed daily for 4 months reduced inflammation, which in turn improved endothelial function, in people who were at risk of getting heart disease. The endothelium is the one-cell thick lining of blood vessels; it’s where atherosclerosis begins, and endothelial dysfunction is a precursor to atherosclerosis. Another recent study found that olive oil enhances incorporation of the all-important essential fatty acids into cell membranes. The composition of the cell membrane is extremely important because the cell membrane allows nutrients to get into the cell and toxins to get out. Essential fatty acids give the cell membrane the desired consistency to assure that both processes work as they should. This study, which tracked more than 40,000 men and women for 13 years, found that the more olive oil consumed, the lower the risk of dying from heart disease, or any other cause. Those who consumed the most olive oil had a 26% lower risk of dying from any cause than those who consumed none, and a 44% lowered risk of dying from heart disease. These results are impressive, but not all those people were consuming real olive oil. Imagine what the results might have been if they were all using olive oil that was not diluted with other oils.
